Note: I love cheese tortellini, pesto, sausage and soup. So, I made one. Perfect with white wine and great for a weeknight because it only takes ~ 1 hour. Sadly and notoriously, soup photographs ugly...So, just trust.
Recipe:
1 8-10 oz Package Tortellini (your choice, I went for cheese)
1 8-12 oz Chicken Apple Sausage (pick your favorite flavor)
2-3 Carrots, washed and chopped
1 Stalk Celery, chopped
1 Onion, chopped
1 Zucchini, chopped
12 oz White Beans, drained
12 oz White Beans, drained
2 Tbs Butter
1 Garlic clove, pressed
64 oz Chicken Broth/Stock
1 Container Basil Pesto
1 Bottle White Wine (to deglaze and drink)
Salt, Pepper
Mixed shredded cheese and parsley to garnish
Crumble and cook the sausage in a large soup pot. Remove, cut in butter, then turn in the celery, carrot, onion, zucchini, and garlic and saute until soft and fragrant. Add the drained white beans. Sprinkle with salt and pepper. Add sausage back in to pot, deglaze with a splash of wine, and let simmer down. Pour in the stock and broth, add a spoonful of pesto, and let simmer. Check the tortellini cook time - about that distance out from eating, pour the tortellini in to the soup pot and simmer until done. Ladle in to bowls, top with a dollop of pesto, cheese, and parsley. Serve hot.
